Step-by-Step Guide for Your Weber Kettle BBQ:
Prepare the Barbecue:
> Ensure the bottom ash catcher is empty, and the bowl and grates are clean.
> Open the bottom vents fully to allow proper airflow.
Lighting the Charcoal:
> Use a chimney starter for best results. Fill it with charcoal briquettes and place crumpled newspaper or a fire starter underneath. Light the newspaper/fire starter.
> When the coals turn white and ashy (about 15-20 minutes), carefully pour them into the grill's charcoal grate.
Set Up for Cooking:
> For direct heat cooking: Spread the coals evenly across the grate.
> For indirect heat cooking: Push the coals to one side or use a charcoal divider to create a two-zone cooking area.
> Place the cooking grate on top and preheat it for 5 minutes with the lid on.
Control the Temperature:
> Use the top and bottom vents to control the heat:
> Open vents fully for high heat.
> Close partially to lower the temperature.
> Keep the lid on as much as possible during cooking to maintain consistent heat.
Grilling:
> Place your food on the cooking grate. Use direct heat for searing and quick cooking, and indirect heat for slower cooking or larger cuts of meat.
> Monitor using a food thermometer for precise cooking.
Post-Grilling:
> Close the top and bottom vents after cooking to extinguish the coals.
> Once the grill cools, empty the ash catcher and clean the grates.
